Ingredients:
- 1 cup dried lentils (green or brown), rinsed
- 1 tablespoon extra virgin olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon red pepper flakes (adjust for spice level)
- 1 (14 oz) can diced tomatoes
- 4 cups vegetable broth
- 2 cups chopped kale (stems removed)
- 1/2 teaspoon sea salt (or to taste)
- 1/4 teaspoon black pepper
- Juice of 1/2 lemon
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
- Stir in cumin, smoked paprika, turmeric, and red pepper flakes. Cook for another minute to toast the spices.
- Add lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and let simmer for 25-30 minutes until lentils are tender.
- Stir in chopped kale and cook for another 5 minutes until wilted.
